Born in the bustling lanes of North Kolkata, Chef Sujay grew up watching his grandmother transform simple spices into extraordinary stories. After training at the Institute of Hotel Management Kolkata and honing his craft across fine-dining kitchens in Mumbai and London, he carried his grandmother's philosophy to Seattle — that every dish should start a conversation.
